If you are looking to be fancy, or to impress your dinner guests, then you should be making and using truffle butter! Truffle butter is a culinary ingredient made by combining butter with finely chopped or pureed truffles. It is great on top of steak, seafood, pasta, or sauces, and is incredibly easy to make!

What Are Truffles?

Truffles are a type of edible fungi that grow underground, typically near the roots of certain trees like oak, hazel, beech, and others. They are highly prized in cooking for their unique and intense aroma and flavor, and the price shows it! Truffles have a rough, irregular shape and range in color from pale cream to dark brown, depending on the species.

Common Types of Truffles:

  • Black Truffles: Black truffles are considered a delicacy and are native to regions like France, Italy, and Spain. They have a strong, earthy flavor with hints of chocolate, nuts, and garlic. I typically can find these around $40 an oz.
  • White Truffles: White truffles are even more prized and are found primarily in Italy, particularly in the Piedmont region. They have a powerful aroma that is often described as garlicky, with complex flavors that can be quite pungent and unique. White truffles are typically hundreds of dollars per oz.

Ingredients:

  • 1 lb high quality European butter, room temp and soft
  • 1 – 1.5 oz fresh truffles, I used black truffles (Use higher amount if you like a stronger truffle taste)
  • 1/2 tsp salt

Preparation:

STEP 1.

Add the softened butter to a bowl. Beat with a whisk until it is soft and smooth.

STEP 2.

Microplane the truffles so they are very fine. Alternatively, chop very finely.

STEP 3.

Add the truffles and salt to the softened butter. Stir in so it is evenly incorporated with a rubber spatula.

STEP 4.

Lay a large piece of plastic wrap flat on the counter. Dish a few large spoonfuls of the butter onto the plastic wrap in the middle to make a log. Wrap the butter in the plastic wrap to form a log. Press together with your hands, forcing out any air bubbles. Twist the ends so they are secured and make sure the log is firmly formed with your hands.

STEP 5.

Transfer the fridge and refrigerate for 2-3 hours until firm. Remove from the fridge and slice to use. Enjoy!
