
One of the best parts of my day is drinking an iced latte. I am quite literally addicted to lattes, especially ones with specialty flavors. I am all about the cold foam, the seasonal ingredients, and interesting syrups. One of my favorites has been a banana latte. A local coffee shop here in Orange County got me hooked on them, but I am not hooked on the $9 price tag, so I started making them at home!
Making your own homemade syrups is actually super easy. It is simply sugar, water, and whatever flavor add-ins you like. For this recipe I combine ripe bananas with both brown sugar and cane sugar. I find that the combination balances so well with the bananas and makes for a perfect latte. If you love bananas and coffee, you will love this!

Key Ingredients & Substitutions:
- Bananas – This is the star of the syrup! Make sure you have ripe bananas.
- Brown Sugar – Adds a richness to the syrup that compliments the banana well. Coconut sugar or maple syrup works as a less refined swap.
- Cane Sugar – Balances and lightens the syrup base. Regular granulated sugar works just as well.
- Vanilla – Adds to the syrup! Omit if needed.
- Cinnamon – Adds warm spice throughout. Cardamom is a lovely addition or substitute.

Brown Sugar Banana Syrup
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Serves: 1 pint
Ingredients:
- 4 bananas, ripe and sliced thinly
- 1 cup brown sugar
- 1 cup cane sugar
- 3/4 cup water
- 1/2 tsp cinnamon
- 2 tsp vanilla
- 1/2 tsp salt
Preparation:
STEP 1.
In a pot add the bananas, brown sugar, cane sugar, water, cinnamon, vanilla and salt. Turn the heat to medium and bring the mixture up to a low simmer. Simmer for 5-10 minutes, stirring occasionally until the bananas are soft and the sugar has melted.
STEP 2.
Turn off the heat and blend until smooth.
STEP 3.
Store in the fridge for up to 2 weeks, or freeze in batches!
