Garlic & Soy Baby Broccoli

Soy, garlic, and broccoli are an amazing trifecta that I love to use when I want to make my vegetable side dish more interesting. I actually used to make this a lot when I was regularly meal prepping for clients because it is such a great way to make broccoli taste better. Here I am using baby broccoli, which in my opinion has a better texture than regular broccoli, but you can use this recipe for any fibrous green and it works! It is a great Asian inspired twist on broccoli.

Key Ingredients & Substitutions:

  • Baby Broccoli – The star of the dish. Regular broccoli or broccolini work great too.
  • Butter – This adds a richness to the flavors. You can just use sesame oil to make dairy free.
  • Sesame Oil – Adds a deep, nutty aroma. Use avocado oil in place as a neutral oil.
  • Garlic – Freshly minced only!
  • Ginger – Compliments the garlic and soy. Omit if needed.
  • Red Pepper Flakes – Adds a subtle kick. Adjust to your spice preference.
  • Tamari – Adds savory, umami depth. Coconut aminos are a great soy free swap, or normal soy sauce if you can have gluten.
  • Sesame Seeds – Adds a nutty crunch as garnish.

Garlic & Soy Baby Broccoli

Ingredients:

  • 2 bu baby broccoli, ends trimmed and small leaves removed
  • Salt
  • 1 Tbsp butter
  • 1 Tbsp sesame oil
  • 5 garlic cloves, minced
  • 1/2 inch piece ginger, minced
  • 1/4 tsp red pepper flakes
  • 2 Tbsp tamari, 25% less sodium
  • 1 Tbsp sesame seeds for garnish
  • 1 Tbsp green onions for garnish

Preparation:

STEP 1.
Blanch the baby broccoli. Boil a pot of water and season with salt. Add the broccoli and blanch for 2-3 minutes, until al dente. Immediately remove and shock in an ice bath to keep bright green. Pat dry once it is chilled.

STEP 2.
In a large pan over medium heat, add the butter and sesame oil. Once the butter is melted and bubbling, stir in the baby broccoli. Stir and toast for one minute to warm through and char. Then stir in the garlic, ginger and red pepper flakes and stir for 2 minutes to cook.

STEP 3.
Stir in the tamari and saute for 2-3 minutes to coat and caramelize.

STEP 4.
Turn of the heat and serve with sesame seeds and green onions. Enjoy!
