Garlic Butter Duchess Potatoes

Fluffy, buttery, and crispy, duchess potatoes, aka pommes duchess, is one of the most underrated potato dishes out there! I first made these in culinary school, and will now make them on special occasions for people who have never gotten the opportunity to try them before!

Pommes duchess, also known as Duchess potatoes, are a classic French dish that originated in the 18th century. You make them by pureeing cooked potatoes with butter, egg yolks, and seasoning, then piping the mixture onto a baking sheet and baking until golden and crispy. I personally love to mix in things like garlic and herbs to make this classic a bit more modern and exciting. Here I make a garlic butter and herbed duchess potato that are both crispy on the outside, and fluffy and buttery on the inside.

Key Ingredients & Substitutions:

  • Russet Potatoes – You want to use a white potato here, and a starchy one like russet potatoes. Yukon gold potatoes work too for a slightly creamier texture.
  • Butter – Adds richness and flavor throughout. You can also use vegan butter here.
  • Garlic, minced – Adds savory depth and aroma. Roasted garlic gives a sweeter, milder version, just puree them.
  • Egg Yolks – Give the potatoes their rich, silky texture and help hold their piped shape. No substitute here.
  • Parsley – Add a subtle fresh flavor and pop of green. Chives are an awesome swap.

Garlic Butter Duchess Potatoes

Prep Time: 20 minutes

Cook Time: 1 Hour 25 minutes

Total Time: 1 Hours 45 minutes

Ingredients:

  • 1 lb russet potatoes
  • 1/2 stick butter
  • 6 garlic cloves, minced
  • 2 egg yolks, beaten
  • 2 Tbsp parsley, minced
  • salt and pepper to taste
  • 1 egg whisked, for egg wash

Preparation:

STEP 1.
Preheat the oven to 400°F.

STEP 2.
Poke the russet potatoes with a fork a few times on each potato to help release steam. Place on a parchment lined sheet tray and transfer to the oven. Bake for 45-60 minutes, until fork tender and cooked through.

STEP 3.
Make the garlic butter while the potatoes are in the oven. In a pot over low heat add the butter. Once it is melted and bubbling, stir in the garlic. Stir for two minutes, until fragrant, and take off the heat. Be careful to keep the heat low so the garlic doesn’t burn.

STEP 4.
Remove the skin and run the flesh of the potato through a potato ricer. Once the potatoes are riced, stir in the garlic butter, egg yolks, parsley and salt and pepper to taste. It should be a thick mash.

STEP 5.
Transfer the mixture to a piping bag with piping tip. Pipe into one inch swirls on a parchment lined sheet tray with one inch between each potato.

STEP 6.
Brush with egg wash and transfer to the oven. Bake for 15-20 minutes, or until they are golden brown on the outside.

STEP 7.
Serve and enjoy!
