Green Goddess Salad

If there’s one salad that’s perfect for summer, it’s the Green Goddess. It’s fresh, healthy, zesty, and packed with herbs and great textures. This was one of the most popular recipes at a restaurant I used to work at—we could barely keep up with the orders each night. The secret is in the delicious dressing! Made with avocados and a blend of herbs, it’s light, creamy, and flavorful + perfect on just about anything.

Key Ingredients & Substitutions:

  • Cabbage, Arugula, Cucumber and Basil – This is the bsae for this salad. This is a pretty generic base simply because the magic comes from the dressing. You can use any vegetable or salad lettuce in here and it works!
  • Avocado – This is the base of the dressing and what makes it so creamy. Many other recipes will use mayo instead, however I like the freshness that an avocado brings to the dressing.
  • Lemon Juice – This is the main acid in the dressing. It is what keeps it fresh and not too heavy. You also could use lime here.
  • Basil, Green Onions, Dill – A ton of herbs is what makes this sauce so great! If you omit, make sure to replace with other herbs here!
  • Avocado Oil – This is used for the dressing to help blend and make smooth. Make sure to use a neutral oil like avocado oil here.

Green Goddess Salad

Ingredients:

  • 1/2 head cabbage, cubed
  • 3 cups arugula
  • 1 large cucumber, diced
  • 1/4 cup basil leaves

Dressing:

  • 1.5 lemons, juiced
  • 1 avocado
  • 1/2 cup avocado oil
  • 1/4 to 1/2 cup water for blending
  • 1/4 cup green onions, thinly sliced
  • 1/4 cup dill
  • 1 cup basil leaves
  • 2 garlic cloves, minced
  • salt and pepper to taste

Preparation:

STEP 1.
Add the salad ingredients to a large salad bowl and mix.

STEP 2.
For the dressing, add everything to a blender or immersion blender and blend until smooth. Add water as needed to blend, it should be thick and creamy. Taste for seasoning and add more salt and pepper as needed.

STEP 3.
Mix the dressing into the salad and serve!
