I am a huge fan of chicken salad, but I frankly hate mayo. Because of this, I make my own version that is way better than the mayo filled alternative. I use a creamy red wine vinaigrette that is far more flavorful than mayo. The apples, pecans, and red onions add a nice crunch, while the golden raisins bring a hint of sweetness to tie it all together. Even if you do like mayo, you should give this version a try!
Key Ingredients & Substitutions:
- Rotisserie Chicken – Diced or shredded rotisserie chicken is the best here! Of course you could roast your own chicken to use here, but I like to work smarter not harder.
- Apples – I like a sweet honeycrisp or pink lady apple here! Use any apple of choice or other fresh fruit like a pear or orange.
- Pecans – Use any nut here of choice!
- Red Onion – I love raw red onion for the crunch, but know a lot of people think it is too strong. You can also substitute for green onions or a shallot.
- Golden Raisins – Any dried fruit works here.
