Peach Crisp

I have been watching The Summer I Turned Pretty and there is this scene where they eat the best summer peaches (IYKYK) that has had me craving peaches ever since. This peach crisp is my all-time favorite peach dessert, and it is super easy to make. I highly recommend making it before peach season is over!

Key Ingredients & Substitutions:

  • Peaches – I use ripe yellow peaches here, however any peach works. You can also use nectarines or frozen peaches
  • Brown and White Sugar – These are the best sugars for this dish, however you can absolutely use any sugar of choice.
  • Gluten Free Oats and Flour – If you are not gluten free you may use normal flour and oats for this. Otherwise, no subs.
  • Butter – I use butter here for the flavor, but coconut oil works great here too.

Ingredients:

  • 6 peaches
  • 1/2 lemon, juiced
  • 1/4 cup white sugar
  • 1 Tbsp cornstarch

Toppings:

  • 3/4 cup gluten free oats
  • 3/4 cup gluten free flour
  • 3/4 cup brown sugar
  • 1.5 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup softened butter, cubed

Preparation:

STEP 1.
Preheat the oven to 375°F.

STEP 2.
Remove the skin from the peach. Bring a pot of water to a boil. Make an x through the skin with a knife on each peach near the top. Boil the peaches for 30-60 seconds, until you see the skin start to lift from the x. Remove from the boiling water and shock in ice water.

STEP 3.
Peal the skin away and slice the peaches in half. Remove the pit and slice the peaches into wedges. Add to a bowl.

STEP 4.
In the peach bowl add the lemon juice, white sugar and cornstarch. Mix well with a spatula. Pour into the bottom of a greased 8×8 pan.

STEP 5.
In another bowl mix together the toppings. Use a spatula, or your hands, to break up the butter and incorporate. The texture should be like clumpy wet sand. Add a small amount of melted butter if it is not.

STEP 6.
Sprinkle the mixture on top of the peaches in one even layer.

STEP 7.
Transfer to the oven and bake for 45-55 minutes, until the top is golden brown.

STEP 8.
Remove and cool for 10 minutes. Serve and enjoy!
