
Before working in restaurants, I would often wonder why things tasted so much better. I mean, I cooked with the same ingredients, yet they never tasted quite as good. Through working in restaurants, I realized it isn’t like there was one big secret as to why things were better. It is usually the little things that make restaurant food so much better. Like adding a little crunch to a dish to make a more interesting texture, or salting meats the day before to really flavor them, or even charring lemons to caramelize them and add richness to a dish.
I first saw the technique of charring lemons at this farm-to-table restaurant I used to work for. We would grill them off to add both char and a beautiful presentation. It isn’t groundbreaking in changing the flavors, but it adds a little something that will elevate it slightly.

Key Ingredients & Substitutions:
- Baby Broccoli – Also known as broccolini. It is basically a longer broccoli! You can also use broccoli, asparagus or green beans here.
- Butter – This is used as the cooking fat and browns and caramelizes. You can also use avocado or olive oil here.
- Lemon – You can use any citrus of choice here in place of lemon.
- Garlic – Freshly minced garlic is best here! You can use a pinch of garlic powder if needed.
- Red pepper flakes – These are optional, if you don’t like spice, omit!

Brown Butter & Caramelized Lemon Baby Broccoli
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Serves: 2-4
Ingredients:
- 1 bu baby broccoli, ends trimmed
- Salt as needed
- 2 Tbsp butter
- 1 lemon, halved
- 4 garlic cloves, minced
- 1/4 tsp red pepper flakes
Preparation:
STEP 1.
Blanch the baby broccoli. Boil a pot of water and season with salt. Add the broccoli and blanch for 2-3 minutes, until al dente. Immediately remove and shock in an ice bath to keep bright green. Pat dry once it is chilled.
STEP 2.
In a pot over medium heat, add the butter. Once bubbling, add the lemons cut side down. Sear for 1-2 minutes, until the butter starts to brown. Once the butter is browning, add the baby broccoli and remove the lemons once golden.
STEP 3.
Season the broccoli with salt and saute for 2 minutes to coat in the brown butter and crisp.
STEP 4.
Stir in the garlic and red pepper flakes and saute another 2 minutes to cook the garlic.
STEP 5.
Stir in juice from half the lemon and turn off the heat.
STEP 6.
Serve garnished with the other half of the lemon and enjoy!
