I am a fan of cauliflower, but I run into the issue of getting bored with it easily. I roast it constantly because it gets so golden and crispy, but after the hundredth sheet pan of the same salt and pepper florets, it starts giving nothing. But one way I love to freshen cauliflower up is through gremolata!
Gremolata is an Italian condiment of sorts where you mix together minced herbs, garlic, lemon zest, and lemon juice. It is a great way to brighten up vegetables, chicken, seafood, and more. I even like to mix in parmesan to make it even better. But when tossed with cauliflower right out of the oven, the cauliflower becomes 10x better.
It is a simple way to wake up cauliflower and make it much more interesting, and actually delicious! Plus it is healthy, which is always a win. If you have been bored with your vegetables, give this a try!
Key Ingredients & Substitutions:
- Cauliflower – The star of the dish. Broccoli or romanesco work great too.
- Garlic – Rounds out the gremolata. Adjust to your preference.
- Lemon – Adds bright zest and acidity. Orange zest is an awesome swap for a sweeter version. Only use fresh citrus here.
- Parmesan Cheese – Adds salty, umami richness. Pecorino Romano is a great substitute.
- Parsley – Adds a fresh, herby finish. You can use any delicate herb of choice here like basil or chives.
- Olive Oil – You can also use avocado oil here.

Cauliflower Gremolata
Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes
Serves: 4
Ingredients:
- 2 heads cauliflower, cut into florets
- Salt to taste
- 4 garlic cloves, minced
- 1/4 cup parsley, minced
- 1 lemon, zested
- 6 garlic cloves, minced
- 1/2 lemon, juiced
- 1/4 cup parmesan cheese, grated
- 2 Tbsp olive oil + more for sauteing
Preparation:
STEP 1.
Blanch the cauliflower. Bring a large pot of water up to a boil and season with salt. Add the cauliflower and boil for 1-2 minutes, just until they are fork tender but al dente. You don’t want them too soft! Remove and set aside, dry off completely.
STEP 2.
Make the gremolata. In a bowl mix together the garlic cloves, lemon zest and juice, cheese and one tablespoon of olive oil to make a thick paste. Set aside.
STEP 3.
Saute the cauliflower. In a large pan over medium heat add olive oil. Once hot, add the cauliflower and season with a pinch or two of salt. Saute and stir for 5 minutes, just until the cauliflower is charred.
STEP 4.
Turn off the heat and mix in the gremolata to coat. Taste for seasoning and adjust as needed.
STEP 5.
Serve and enjoy!
